Once you get home from a tiring day of work, you’re too tired to whip something up. I feel you there, I tend to end up having takeout since it’s so convenient. While it sounds quick and easy, it’s more challenging for vegetarians, who have limited choices!
You’ll be surprised by the number of healthy recipes for vegetarians that anyone can do! I created a meal plan that didn’t consist of plain boiled greens. In fact, I didn’t even miss the meat.
And if you’re a super busy bee like I am and can’t cook every day, there are vegetarian freezer meals you can make in batches to freeze for later. It’s a huge time saver and I can eat nutritious, homemade food without breaking the bank (and my schedule).
