When winter hits, all I can think of is Christmas, lots of snow, and negative-degree weather.
That’s when I know I need to rely on a long list of warm soup recipes to un-chill me for this entire winter.
I really love soups that are cream-based, like creamy mushroom or cream of broccoli—oh my goodness, just thinking about it makes me salivate and want to slurp on many bowls of soup, even though it hasn’t been winter yet since, as I write this, it is only fall.
But I can still get ready for it, right? 🙂
What I really love about making soup is that, to me, it’s a one-pot sort of thing.
Every time I make soup, I feel like I can just throw whatever I want into the pot without much prep or cooking time.
Sure, prepping involves washing and cutting, but it’s just one pot where I throw everything in, making it super easy—especially during winter when you’re feeling down and don’t want to do anything.
Soup is perfect for the chilly October, November, December, January, and February months.
I’m a “load it vegetable” type of person, and I really love kale and broccoli, so they are my go-to ingredients to toss into the pot at the last minute, making sure they don’t overcook to retain nutrients like vitamin C and other antioxidants. Pair them with any meat including fish and you’ll be clocking in all your essentials!
