Winters get really cold. And I mean really cold, especially where I live in the north.
We experience snowstorms and often find ourselves stuck indoors during the holidays.
But, I must admit, it feels cozy when I can come up with a nice, warm dinner to help me relax and feel comfortable at home.
I love making hot stews, soups with noodles, or any recipes that feature pumpkins and squash. It’s such a warm and cozy feeling.
One of my favorite recipes is a mouthwatering, heavenly creamy mushroom soup with bouncy noodles and a little bit of Sriracha sauce that makes you want more and more even after your second bowl.
I also like adding a few beef chunks because beef is rich in iron and essential vitamins, which help me, as a woman, increase my blood levels and stay warm since I tend to be slightly anemic.
Besides creamy mushroom noodle soup, I also enjoy minestrone soup with pumpkin, squash, and lots of beans for their iron content.
